Crispy Oven Baked Potato Ham and Cheese Puffs with Thai Slaw

Ingredients (Serves 4)

Thai Slaw

  • 1/2 Cabbage
  • 2 Carrots
  • 1/2 Onion
  • 1 Capsicum
  • Some Parsley
  • 2 tablespoons lime juice
  • 1/2 cup Thai style salad dressing

Method

  1. Mix Cosmo’s potato mash with boiling water. Stir or whisk until mash is well mixed.
  2. Cut the cheese into 1x1x5cm rectangular block and wrap up with ham and then potato mash into a cylinder shape. Roll in breadcrumbs.
  3. Fan bake at 200°C for 40mins.
  4. Thai Slaw - shred the cabbage, carrot, onion, capsicum and parsley and mix in the bowl. Drizzle the slaw with lime and salad dressing.
